Potato Bread

300g cooked potatoes
1 cube fresh yeast (42g)
100 ml lukewarm water
300g whole grain spelt flour
600g wheat flour, type 405
1 tbsp. Bread seasoning (or ground anis, fennel and coriander)
1 tbsp. salt
500g plain yogurt


1. Peel the cooked potatoes and squeeze through a press. Completely dissolve the yeast in lukewarm water. Add the mashed potatoes, flour and remaining ingredients and knead into smooth dough using a food processor. Cover the dough and let it rise in a warm place until its volume has approximately dou-bled.

2. Fill the bread dough into the greased pan and let it rise an additional 15 minutes. 

3. Place the bread mould onto the grate and bake approximately 15 minutes in the centre of an oven preheated to 230° C. Then turn the bread out of the mould and onto a baking tray and finish baking at 200° C for approximately 60 minutes.
